Are you sure you've got the correct pressure plate? You shouldn't have to drill out any thing with the right one.

You could cut the tips of the valves down. I know, that's not a great solution, but it can be done. Or, you can use different, thinner, lash caps. Or, probably the easiest, just double up on the cam box gaskets, or make one out of thicker material.

I've had a set of 205 60 13 BFG Comp TAs on a '74 X1/9 for many, many years. They are on 5.5" wide Personal wheels. I had to roll the front of the front fender just a bit, and they miss the spring perch on the struts by just a whisker, but they do fit.

The service manual isn't specific. It does specify that the rod matching numbers be installed away from the aux shaft (exhaust side). Take care to make sure you install the guides far enough into the head so that you avoid fouling the valve keepers/retainers on the valve seal.

First post looks like an X1/9 cross member, not sure if it would also work on a Scorpion. Second one is not a front sway bar for an X1/9, it might be a rear bar for a 124? The third one looks like a rear bar for an X1/9.

I'm guessing that both cars were in gear when they were hit. There's a good chance that there's more damage to the cars than you can see with a cursory glance.
